Mild Cauliflower and Potato Curry

This curry is not only delicious but nutritious. It is one of those meals that you feel travel the whole way down to your tummy, giving you an amazing feeling inside. The Ginger, Turmeric and Garlic are great for boosting immunity, and the vegetables are a fabulous way to fill you up.

Ingredients:

½ large cauliflower

1 large white/purple sweet potato

2 cloves garlic

1cm nob grated ginger

½ teaspoon turmeric

1 teaspoon cumin

1 teaspoon paprika

¼ coconut cream

1 can of diced tomatoes

2 spring onions

¼ cup of coriander

Method:

  1. Peal and cut sweet potato into cubes

  2. Boil with cauliflower until half cooked

  3. In a fry pan cook garlic, ginger, and white parts of the spring onion save the green parts for later on a moderate heat

  4. Add the spices, cauliflower, sweet potato and tomatoes, allow to further cook for 5 minutes then add the coconut cream and simmer on a low heat for a further 15 minutes.

  5. Add the green parts of the spring onion and coriander and stir through

  6. Serve with coconut yogurt and naan bread

Note: add a Chilli for a bit of spice!
